Substitute for butter
3 or 4 sterile glass jars
1x 750 ml canola oil
2x copfa (kosher vegetable shortening)
2 large onions chopped
2 large carrots chopped

1 large heavy based pot
Large strainer
Large Pyrex jug

Place all ingredients in the pot and bring to a rapid boil.
Boil for about 10 minutes checking the colour of the mixture.
When the mixture is slightly golden in colour turn off the stove and remove from the heat.
I normally place my jars on a thick board on a baking tray.
The mixture is extremely hot so take care now, place a large Pyrex measuring jug in your sink, and with a large strainer on the measuring jug pour the hot contents into the jug. You will have to repeat this again.
Now carefully fill your jars to the neck of the bottle.
Repeat till all the mixture is in the bottles.
DO NOT WAIT till mixture is cool.
Immediately place lids on hot bottles thus creating a good tight vacuum.
Wait about an hour till mixture has cooled right down.
Can be placed in the fridge and can be kept in the freezer for months.
