Scotch Eggs Meatloaf

TRH Scotch Eggs Meatloaf

6 soft boiled eggs, shelled
750gm Minced Beef
1 large, chopped onion
2 cloves garlic, chopped
Chopped Parsley
Salt and Pepper
3 tbls chutney
3tbls tomato sauce
1 tbls Worcestershire sauce
1/4 tsp smoked paprika
3 lightly beaten eggs

Method:
Mix everything together, except the boiled eggs.
Lightly oil an ovenproof loaf dish.
Place half of the mixture in the dish.
Place the boiled eggs down the middle.
Place the rest of the meat mixture on top.
Bake in oven at 180°C for approximately 45 minutes.
Cool in the dish, then turn out onto a plate or serving dish.
