500g of washed and boiled tripe cut into pieces
1 cups parboiled dhal
2teaspoons ginger and garlic
4 green chilli
Salt to taste
1 teaspoon turmeric powder
2 teaspoons chilli powder
2 tablespoons curry powder
½ teaspoon coriander powder
½ teaspoon cumin powder
1 onion sliced
1 tomato diced
2 each cinnamon sticks and bay leaves
Heat two tablespoons of oil
Add cinnamon sticks and bay leaves
Add onion when browned add spices stir for a minute then add tripe, dhal, tomato, salt, ginger, garlic and chilli.
Stir to coat evenly
Cover and cook on medium heat for approximately twenty five minutes
Garnish with curry leaves and coriander
