2 cups brown lentils soaked and rinsed
About 500g stewing beef
One media onion chopped
3cloves garlic minced
Thumb size ginger grated
2 tomatoes chopped
2 tsps green chillies
500ml beef stock
Salt to taste
I normally eyeball my oil. In pot brown the onion well
Add the beef pieces and brown well stirring through
Add the garlic and ginger
Stir though then add the chopped tomatoes and bayleaves stir through then add the rinsed lentils and beefstock and then stir through your green chillies.
Bring to the boil then simmer gently for 2 hours all the while checking and stirring so lentils don’t stick to bottom of pot.
