Sybil’s chocolate coffee carrot oreo cake

TRH Sybil's Sybils chocolate coffee carrot oreo cake

125g soft butter
1/2cup soft brown sugar
1cup caster sugar
2tsps golden syrup
1/4tsp salt
1cup grated carrots
1/4cup cocoa mixed with a little cold milk
1TPSP cooking oil
1/4cup cold water
1tsp vanilla essence
1tsp ground mixed spice
1Tbsp baking powder
1/2tsp bicarbonate of soda
3 large eggs
500g cake flour
1pkt oreo cookies for decoration

Icing
11/2cups icing sugar
1Tbsp melted butter
4 tsps cocoa powder
2 tsps orange juice
1 Tbsp hot water
Preheat oven to 180c

Cream the butter and both sugars.
Add the golden syrup.
Add the remaining ingredients, except the flour and egg whites.
Stir well. Add the flour and stir until well combined.
Whisk the egg whites and fold into the mixture.
Grease a deep baking tin and line the bottom with baking paper.
Pour the mixture into the tin and bake on middle shelf of oven for 40 minutes.
Turn the cake out onto a wire rack and allow to cool.
Icing: combine all the ingredients and stir or beat till smooth.
Spread all over the cake and decorate with the oreos
