So I made a hearty lentil soup using the vegetables my rolled roast beef rested on in the slow-cooker.
There was orange sweet potatoes carrots, celery, onions, brown mushrooms
So my son who is a chef in the navy took one look at it and said mom make soup from it.
So I used the leftover gravy I made from the slow-cooker added that to the pot with the vegetables.
Added more water, gave it a good simmer then blitzed it all.
Add a cup of lentils
And then there was still some leftover roast beef which I added and now I have a hearty pot of lentil soup….
No wastage 🙂
