Thumbprint Cookies

1 cup salted butter
1/2 cup icing sugar and more for dusting
2 tsp vanilla essence
1/4 tsp salt
2 cups all purpose flour
1/2 cup jam( I used strawberry jam)

Preheat oven to 180 degrees
Blend softened butter and sugar together until fluffy and light.
Add vanilla and salt and mix.
Gently mix in flour. Do not over mix.
Roll tablespoons of dough into balls and place on lined baking sheet.
Press down the centre with the back of a spoon or thumb to form a slight depression.
Fill centre with jam.
Bake for 12 – 15 minutes.
Let cookies cool and dust with icng sugar.
Store in an airtight container for a few days.
