Description

Get ready for our mouthwatering Trotters with Samp and Beans. Packed with flavors that will stimulate your taste buds like never before.


Ingredients

Units Scale
  • 1 1/2 dozen trotters
  • 2 cups of samp
  • 1 cup sugar beans
  • 1 onion
  • 2 teaspoons of oil
  • 1 teaspoon jeera seeds
  • 1 star anise
  • 1/4 tsp hing
  • 2 bay leaves
  • 1 tsp turmeric
  • 2 tsp dhania jeera powder
  • 2 tsp ginger and garlic paste
  • 3 tbsp mother-in-law masala
  • 2 tbsp Kashmiri chili powder
  • 1 chopped tomato
  • 1 stock cube
  • 1/2 cup tomato paste
  • 1 tsp garam masala

Instructions

  1. Clean, wash, and boil trotters (I used lamb trotters) until soft.
  2. I discard the boiling liquid (my preference), feel free to use it in the curry if you like.
  3. Boil the samp and the sugar beans which have been soaked in cold water for a few hours prior to boiling.
  4. Fry the onion in a little oil with jeera seeds, star anise, hing (counteracts effects of gaseous foods – aka asafoetida), and leaves.
  5. Add turmeric, dhania jeera powder, ginger and garlic paste, mother-in-law masala, Kashmiri chili powder, and braise for ±5 mins.
  6. Add tomato, trotters, curry leaves and mix well with spices, and cook on medium heat for +- 10 mins.
  7. Add boiled samp & sugar beans, cube (any flavor of your preference), and tomato paste and cook on medium heat for ±15 mins.
  8. Add water, a little at a time when necessary and depending on how much gravy you like. We prefer a good amount of gravy.
  9. Sprinkle with garam masala.
  10. Enjoy
