Veggy and Chicken Cups with egg mix in a muffin tin or you can do it in a large single dish for a quick afternoon meal
Ingredients
8 eggs
1 large zucchini grated
1 red pepper grated
½ onion finely diced
¾ cup grated cheese
1 back attached chicken – sliced
Pinch of nutmeg and baking powder
Salt and pepper to taste
Method
Beat the eggs in a large bowl then add the nutmeg, salt, pepper, and baking powder. Then gently stir all ingredients together. Place in lined tin and back for 25mins or till set at 350F degrees
