Description
Bake these light, flaky kolache pastries with sweet apple and apricot fillings. Great for sharing or enjoying with coffee.

Pastry
- 225 g softened butter
- 230 g tub low-fat cream cheese, softened
- 2 cups cake flour
Filling
- 1 1/2 cups finely chopped peeled apples or canned pie apples
- 1/4 tsp ground cinnamon
- 1 tin apricots, drained
- Any jam or fruit preserves
Icing
- 1 cup icing sugar
- 4 1/2 tsp milk
- 1/2 tsp vanilla essence
Instructions
- In a large bowl, beat the butter and cream cheese until smooth and fluffy.
- Gradually add the flour and mix until well combined.
- Divide the dough into two portions, cover, and chill for 2 hours or until firm enough to roll.
- In a small bowl, mix the apples with cinnamon.
- Preheat your oven to 200°C (about 400°F).
- On a lightly floured surface, roll one portion of dough into a 15×9-inch rectangle.
- Cut into 3-inch squares. Place a teaspoon of apple mixture, a whole apricot, or jam in the center of each square.
- Fold two opposite corners over the filling and pinch tightly to seal. Place them about 2 inches apart on an ungreased baking sheet. Repeat with the remaining dough and fillings.
- Bake for 10–12 minutes, or until the bottoms are lightly golden.
- Mix icing sugar, milk, and vanilla until smooth. Drizzle over slightly cooled pastries.
- Makes about 24 pastries.
