Description

Tired of snacks that leave you hungry an hour later? These chewy, no-bake Apricot Almond Energy Bars are made with real ingredients you probably already have. No oven, no weird stuff, just 10 minutes and a food processor.


Ingredients

  • 2 cups soft dates (pits removed)
  • 2 cups dried apricots
  • 2 cups raw almonds
  • 6 tablespoons honey (or maple syrup to keep it fully vegan)
  • 1 tablespoon chia seeds
  • 2 tablespoons old-fashioned rolled oats

Instructions

  1. Grab a baking dish (or even a disposable tray) and line it with foil or parchment, whatever makes cleanup easy.
  2. Toss everything into a food processor.
  3. If yours isn’t super powerful, do it in batches so you don’t burn it out.
  4. Pulse the mixture until it’s chunky but blended.
  5. Don’t overdo it, you want a bit of texture, not a sticky paste.
  6. Scoop the mix into your lined tray and press it down firmly with your hands or the back of a spoon.
  7. Really pack it in so the bars hold together.
  8. You can eat them right away, but if you let them chill for a bit, they firm up better and slice cleanly.
  9. Store in the fridge for easy grab-and-go snacks.
