Description
Tired of boring scrambled eggs? This cheesy egg roll-up is a fun twist, plus, it sneaks in some greens!
Ingredients

- 2 cups baby spinach
- 1 tbsp butter
- 3 eggs
- 50g mature white cheddar, grated
Optional
- Epicure Roasted Garlic Aioli (for serving)
- Epicure Chives & Onion Sea Salt (or your favorite spice mix)
Instructions
- SautΓ© the spinach in butter until wilted. Set it aside.
- Line a small baking tray with baking paper.
- Whisk the eggs, then pour them into the tray.
- Sprinkle on the cheese and seasoning.
- Bake at 180Β°C (350Β°F) for about 7 minutes, or until set.
- Take it out, layer the spinach on top, and gently roll it up.
- Slice and serve with a swipe of garlic aioli. Itβs warm, cheesy, and way more fun than your usual breakfast and even a light lunch.
