Description
Moist banana cake in a fun ring shape with crunchy almonds. Perfect snack or dessert for any time!

- 3 ripe Bananas
- 1 heaped teaspoon Baking Soda
- 55g Margarine
- 1 cup White Sugar
- 1 large Egg
- 5ml Vanilla Extract
- 1 1/2 cups Self-Raising Flour
- Pinch of Salt
- 1/2-3/4 cup Slivered Almonds (optional, eyeball it as you like)
Instructions
- Preheat your oven to 325F. Grease your pan generously with spray or butter. I baked mine in a ring pan this time, as it makes slicing easier and gives a fun shape.
- If your bananas aren’t super ripe, microwave 3 Bananas for about 40 seconds to soften them.
- Mash in a small bowl and sprinkle over 1 heaped teaspoon of Baking Soda. Set aside.
- In a separate bowl, cream together 55g Margarine, 1 cup White Sugar, 1 large Egg, and 5ml Vanilla Extract with an electric mixer until light and pale.
- Mix in the mashed bananas. Beat again until fully combined.
- Gently fold in 1½ cups Self-Raising Flour and a pinch of Salt using a spoon.
- Mix until no flour streaks remain, be careful not to overdo it.
- Pour the batter into your greased pan.
- If using a ring pan, sprinkle ½–¾ cup of Slivered Almonds on the bottom before adding the batter, so the almonds sit on top after baking.
- Bake for 50–60 minutes.
- Test with a skewer in the center; it should come out clean.
- Let cool slightly before removing from the pan. Slice and serve!
