- 2 cups all-purpose flour
- 1 teaspoon sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup (125g) butter, cubed
- 1 large egg
- 1/2 cup sour cream
- 1 cup cheddar cheese, grated
- 1/2 cup green onions, chopped
- 3 tablespoons cold water

Instructions
- Grab a large bowl and sift together the flour, baking powder, baking soda, salt, sugar, pepper, and thyme.
- Toss in the cubed butter and rub it into the dry mix with your fingers until it feels like damp sand.
- In a small bowl, lightly whisk the egg, sour cream, and cold water.
- Pour the wet mix into the dry ingredients. Add the grated cheddar and chopped green onions, then gently stir until the dough just comes together. No overmixing, as then you will have dense scones.
- Turn the dough onto a clean surface and knead it a few times to bring it all together. Roll it out to about an inch thick, then cut into circles or squares.
- Place the scones on a lined baking sheet, brush the tops with a bit of egg wash
- Feel free to sprinkle with extra salt and pepper for that extra special touch.
- Pop them in the oven at 350°F (180°C) for 15–20 minutes, until golden and irresistible.
