Marinade
- 1kg chicken pieces
- 1/2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tbsp Shaoxing cooking wine (optional)
- A dash of white pepper
- 1 tbsp Hoisin sauce
- 1 tbsp garlic/chili sauce
- 1 tbsp tapioca (or cornstarch)

For the Stew
- 2 tbsp cooking oil
- 4 cloves garlic, chopped
- 2-inch piece of ginger, sliced
- 1-star anise
- 1 small cinnamon stick
- 1 bay leaf
- 2 potatoes, cut into wedges
- 1 carrot, sliced diagonally
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1/2 tbsp sugar
- 2 cups chicken stock
- 2 tbsp Shaoxing cooking wine (optional)
- A dash of sesame oil
- 1 spring onion, sliced

Instructions
- Toss the chicken with all the marinade ingredients.
- Mix it well, cover it, and let it soak up the goodness for at least an hour (longer is better).
- Heat your wok or pan with some oil.
- Toss in garlic, ginger, star anise, cinnamon, and bay leaf, your kitchen’s about to smell amazing.
- Add the marinated chicken and sear until golden on both sides.
- Stir in the potatoes and carrots. Give everything a good mix to coat in those flavors.
- Pour in light soy sauce, oyster sauce, sugar, and chicken stock, just enough to almost cover the chicken.
- Let it boil, then cover and simmer on medium heat for 15 minutes.
- Stir occasionally and enjoy the aroma.
- Check the veggies, they should be tender by now, or continue to cook till ready, up to 15 minutes extra.
- Crank up the heat, splash in the cooking wine, drizzle with sesame oil, and stir until the sauce thickens.
- Sprinkle with spring onions for that perfect finish.
