  1. Give those garlic scapes a good rinse and trim off the ends.
  2. You’re after the tender, curly parts that smell like a garlic-lover’s dream.
  3. Chop them into small pieces to make blending a breeze.
  4. Toss the scapes, almonds, sunflower seeds, olive oil, Parmesan, and a pinch of salt and pepper into your food processor.
  5. Pulse until it looks like a chunky pesto.
  6. Scrape half of the pesto into a bowl, then stir in the Greek yogurt and sour cream.
  7. Pour everything back into the food processor and blend until it’s smooth, creamy, and begging for a cracker or two.
  8. Want a milder flavor? Add more yogurt or sour cream until it’s just right for you.
