- 80g garlic scapes
- 22g almonds
- 8g sunflower seeds
- 7.5ml olive oil
- 6g freshly grated Parmesan cheese
- Salt and pepper
- 100g Greek yogurt
- 100g sour cream
Instructions
- Give those garlic scapes a good rinse and trim off the ends.
- You’re after the tender, curly parts that smell like a garlic-lover’s dream.
- Chop them into small pieces to make blending a breeze.
- Toss the scapes, almonds, sunflower seeds, olive oil, Parmesan, and a pinch of salt and pepper into your food processor.
- Pulse until it looks like a chunky pesto.
- Scrape half of the pesto into a bowl, then stir in the Greek yogurt and sour cream.
- Pour everything back into the food processor and blend until it’s smooth, creamy, and begging for a cracker or two.
- Want a milder flavor? Add more yogurt or sour cream until it’s just right for you.
