- 2 cups cornflakes
- 2 cups Rice Krispies
- 1 cup coconut slices
- 1/2 cup cashews
- 1/2 cup almonds
- 1/2 cup peanuts
- 1 cup raw peanuts (skins on)
- 1/2 cup sesame seeds
- 2 potatoes
- A sprig of curry leaves
- 1 teaspoon fennel seeds
- Masala or chili powder (to taste)
- Salt (to taste)
- Oil for frying
- Food coloring (optional)

Instructions
- Thinly slice the potatoes, soak them in cold water to remove excess starch, then drain and pat them dry.
- Fry until they’re irresistibly crispy.
- Toss them in a touch of food coloring for a pop of color (optional).
- Spread the coconut slices and cereals on a baking sheet.
- Toast them in a 180°C oven until lightly golden.
- Let them cool completely before tossing the coconut in some food coloring if you’d like.
- Heat a dry pan and toast the sesame seeds until they turn light brown. Watch closely, they toast fast!
- Fry the raw peanuts (skins on!) until golden, then sprinkle with salt while they’re still hot. Trust me, this step adds the perfect crunch.
- Fry the cashews and almonds separately for a uniform golden finish.
- In a small pan, heat a bit of oil.
- Toss in the curry leaves, chilies, and fennel seeds. Cook until they start to splutter and fill your kitchen with their incredible aroma.
- Once everything cools down, it’s time for the fun part.
- Combine all the ingredients in a big bowl.
- Sprinkle with masala and salt, then toss thoroughly to coat every piece with that spicy goodness.
- Keep your Chevda in an airtight container to maintain its crunch.
- Warning: it’s so addictive you might want to make a double batch!
