- 75g garlic scapes (about 6-8, depending on size)
- 30g walnuts
- 20g fresh basil
- 20g freshly grated Parmesan cheese
- 15ml fresh lemon juice
- 1.5ml salt
- 125ml virgin olive oil

Instructions
- Chop the entire scape, flowers, stems, and all, into 1-inch pieces.
- Toss the scapes and walnuts into a food processor. Blend for about 30 seconds, until the mix starts to look crumbly.
- Throw in the basil, Parmesan, lemon juice, and salt.
- Give it 20–30 pulses to combine everything without turning it into baby food. You want some texture here.
- Slowly pour in the olive oil while pulsing.
- Go slow, you can always add more if it’s too thick.
- Stop when it’s the consistency you love.
- Scrape the pesto into a jar or container, pop it in the fridge, and you’re good to go.
- It’ll keep for about a week, if it lasts that long!
