Description

Let me tell you, this recipe is a total game-changer. I’ve been on the hunt for something quick, Low-carb, and satisfying, and this little dish checks all the boxes. It’s like comfort food without the carb coma. You don’t need fancy skills or a pile of ingredients, just a skillet, a handful of staples, and about 15 minutes. Let’s do this!


Ingredients

  • 15 g - 1/4 small onion, chopped
  • 5 g - 1 tsp olive oil
  • A dash of salt
  • A dash of ground black pepper
  • 90 g - 3/4 cup cauliflower, chopped
  • 90 g raw pork sausage


Instructions

  1. Grab your food processor (or a trusty box grater) and turn that cauliflower into something that looks like rice. 
  2. Heat the olive oil in a skillet over medium heat.
  3. Toss in the chopped onion and let it sizzle for a few minutes. You want it soft and just starting to brown, it’s your flavor base, so let it shine.
  4. Slice or crumble your sausage and add it to the skillet. Stir it around, breaking it up as it cooks. You’re looking for those golden, crispy bits.
  5. Add your cauliflower rice to the pan, sprinkle in the salt and pepper, and give it a good mix.
  6. Let it cook for about 5 minutes, stirring occasionally. The cauliflower should soften but still have a little bite, nobody likes mushy rice!
  7. Scoop it onto a plate and dig in. Want to get fancy? Sprinkle a little Parmesan or a pinch of red pepper flakes on top.
