- 90 g - 3/4 cup cauliflower, chopped
- 90 g raw pork sausage
Instructions
- Grab your food processor (or a trusty box grater) and turn that cauliflower into something that looks like rice.
- Heat the olive oil in a skillet over medium heat.
- Toss in the chopped onion and let it sizzle for a few minutes. You want it soft and just starting to brown, it’s your flavor base, so let it shine.
- Slice or crumble your sausage and add it to the skillet. Stir it around, breaking it up as it cooks. You’re looking for those golden, crispy bits.
- Add your cauliflower rice to the pan, sprinkle in the salt and pepper, and give it a good mix.
- Let it cook for about 5 minutes, stirring occasionally. The cauliflower should soften but still have a little bite, nobody likes mushy rice!
