- 1 medium egg
- A pinch of salt and pepper
- 2 tablespoons almond flour (12g)
- 1/3 teaspoon baking soda
- 1 clove of garlic, minced
- 4 small cherry tomatoes (40g)
- 1 sprig of parsley, chopped
- 1 teaspoon olive oil (6g)
- 1/4 cup grated cheddar cheese (30g)
Instructions
- Get your waffle iron hot. You don’t want to pour batter into a cold iron.
- In a bowl, whisk the egg like your life depends on it.
- Add the grated cheese, almond flour, garlic, and baking soda.
- Mix it up until it looks smooth-ish.
- Season with salt and pepper because bland waffles are a crime.
- Heat a little olive oil in the waffle iron.
- Don’t skip this step unless you want a waffle-removal nightmare.
- Pour some batter into the iron, close the lid, and let it cook for 2–3 minutes.
- You’re aiming for golden, crispy perfection. Repeat until you’re out of batter.
- While the waffles are doing their thing, heat the rest of the olive oil in a pan.
- Plate the waffles, top with those gorgeous tomatoes, sprinkle some parsley on top, and then devour.
