  • 3 tbsp Heavy Cream (42g, 36% fat)
  • Dash of Salt
  • 1/3 cup Greek Yogurt (85g, 4% fat)
  • 3 drops Stevia Liquid (or your favorite sugar-free sweetener)


Instructions

  1. Combine the chia seeds, egg, heavy cream, stevia, Greek yogurt, and a pinch of salt in a bowl.
  2. Let it rest for 2–3 minutes, so the chia seeds can soften and start to thicken.
  3. Heat the butter in a pan over medium heat until it melts.
  4. Pour the mixture into the pan, stirring gently as it cooks.
  5. Keep the heat low enough for a gentle simmer, not a boil.
  6. In about 5–6 minutes, you’ll have a rich, creamy porridge that’s firm and full of texture.
