Scale
- 1 whole chicken, cut into pieces
- 3 beaten eggs
- 4 Tbsp oil
Coating:
- 2 cups flour
- 4 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- 1 tsp poultry seasoning or chicken stock powder
- 1 tsp oregano
- 1 tsp tarragon
- 1 tsp parsley
- 1/2 tsp thyme
- 1 tsp chives
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp celery salt
Instructions
- Pat chicken dry with paper towels so the coating sticks better.
- In a bowl, beat the eggs with the oil.
- In a large bowl or zip bag, mix flour and all coating spices.
- Dip each chicken piece into the egg mixture, then coat well in flour mix.
- For extra crispy chicken, repeat (egg then flour again).
- Place coated chicken on a tray and let it rest for 10 minutes; this keeps the crust from falling off.
- Heat oil in a deep pan to 170–175°C / 340–350°F.
- Fry chicken in batches, about 6–8 minutes per side, until golden and cooked through (internal temp 74°C / 165°F).
- Drain on a wire rack or paper towels. Serve hot.
