Description

Ingredients

  • 1 lb cooked jumbo shrimp (peeled, deveined, and chopped)
  • 1 ripe avocado, diced
  • 1 medium tomato, diced
  • 1 jalapeΓ±o (seeded and finely chopped)
  • 1/4 cup red onion, chopped
  • Juice of 2 limes
  • 1 tsp olive oil
  • 1 tbsp fresh cilantro, chopped
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, mix the red onion, lime juice, olive oil, and a pinch of salt and pepper.
  2. Let that sit for at least 5 minutes.
  3. It takes the bite out of the onions and gives the whole dish a citrusy kick.
  4. In a large bowl, combine the shrimp, avocado, tomato, and jalapeΓ±o.
  5. Pour in the marinated onion mix, add the cilantro, and gently toss everything together.
  6. Add more salt or pepper if needed.
  7. Serve it fresh.
