- 1 lb cooked jumbo shrimp (peeled, deveined, and chopped)
- 1 ripe avocado, diced
- 1 medium tomato, diced
- 1 jalapeΓ±o (seeded and finely chopped)
- 1/4 cup red onion, chopped
- Juice of 2 limes
- 1 tsp olive oil
- 1 tbsp fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
- In a small bowl, mix the red onion, lime juice, olive oil, and a pinch of salt and pepper.
- Let that sit for at least 5 minutes.
- It takes the bite out of the onions and gives the whole dish a citrusy kick.
- In a large bowl, combine the shrimp, avocado, tomato, and jalapeΓ±o.
- Pour in the marinated onion mix, add the cilantro, and gently toss everything together.
- Add more salt or pepper if needed.
- Serve it fresh.
