Salad:
- 8 oz bowtie pasta
- 4 cups fresh spinach
- 1/2 cup dried cranberries (Craisins)
- 1/3 cup cashews or pine nuts
- 1 small can (4 oz) mandarin oranges, drained
- 1/4 cup chopped cilantro
Dressing:
- 1/3 cup thick teriyaki sauce
- 1/3 cup apple cider vinegar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp sugar
- 1/2 cup olive oil
Instructions
- Cook the pasta according to the package instructions, drain it, and rinse with cold water so it cools down fast.
- Set it aside.
- While the paste is cooking, shake up all the dressing ingredients in a jar.
- Store it in the fridge until you’re ready.
- In a big bowl, mix the pasta, spinach, craisins, nuts, mandarin slices, and cilantro.
- Right before serving, pour the dressing over and toss everything together. Done!
