Description

Think pasta, but make it bright, fresh, and just a little unexpected. Mandarin Pasta Spinach Salad mixes sweet mandarin oranges, chewy cranberries, crunchy cashews, and bowtie pasta, all tossed in a bold teriyaki dressing. It’s the one salad that never gets left behind at a party.


Ingredients

Salad:

  • 8 oz bowtie pasta
  • 4 cups fresh spinach
  • 1/2 cup dried cranberries (Craisins)
  • 1/3 cup cashews or pine nuts
  • 1 small can (4 oz) mandarin oranges, drained
  • 1/4 cup chopped cilantro

Dressing:


Instructions

  1. Cook the pasta according to the package instructions, drain it, and rinse with cold water so it cools down fast.
  2. Set it aside.
  3. While the paste is cooking, shake up all the dressing ingredients in a jar.
  4. Store it in the fridge until you’re ready.
  5. In a big bowl, mix the pasta, spinach, craisins, nuts, mandarin slices, and cilantro.
  6. Right before serving, pour the dressing over and toss everything together. Done!
