- 2 packets crushed tennis biscuits
- 200g melted margarine
- 4 Γ 125g tubs of cream cheese, softened
- Icing sugar, to taste
- 500g milk chocolate, divided (400g + 100g)
- 1 tbsp cooking oil
Instructions
- Mix 2 packets crushed tennis biscuits with 200g melted margarine in a bowl until everythingβs well combined.
- Press the mixture firmly into the bottom of a greased springform tin. Set aside while you work on the filling.
- In a separate bowl, mix 4 Γ 125g tubs of cream cheese with icing sugar until smooth. Taste and adjust the sweetness.
- Melt 400g of milk chocolate.
- Slowly add a little of the cream cheese mixture to the chocolate at a time, stirring well until smooth and fully combined.
- Pour the chocolate-cream cheese mixture over the biscuit base.
- Press down gently to remove any air bubbles. Pop it in the fridge for 20 minutes.
- While it chills, melt the remaining 100g milk chocolate with 1 tbsp cooking oil. Once melted, set aside.
- After 20 minutes, remove the cheesecake from the fridge and pour the melted chocolate topping evenly over the top.
- Sprinkle chocolate sprinkles if you like, then return it to the fridge to set overnight.
- Slice gently with a hot knife for clean cuts and serve chilled.
