Instructions

  1. Mix 2 packets crushed tennis biscuits with 200g melted margarine in a bowl until everything’s well combined.
  2. Press the mixture firmly into the bottom of a greased springform tin. Set aside while you work on the filling.
  3. In a separate bowl, mix 4 Γ— 125g tubs of cream cheese with icing sugar until smooth. Taste and adjust the sweetness.
  4. Melt 400g of milk chocolate.
  5. Slowly add a little of the cream cheese mixture to the chocolate at a time, stirring well until smooth and fully combined.
  6. Pour the chocolate-cream cheese mixture over the biscuit base.
  7. Press down gently to remove any air bubbles. Pop it in the fridge for 20 minutes.
  8. While it chills, melt the remaining 100g milk chocolate with 1 tbsp cooking oil. Once melted, set aside.
  9. After 20 minutes, remove the cheesecake from the fridge and pour the melted chocolate topping evenly over the top.
  10. Sprinkle chocolate sprinkles if you like, then return it to the fridge to set overnight.
  11. Slice gently with a hot knife for clean cuts and serve chilled.
