Description
Orange Loaf with Glazed Icing is a timeless treat that combines the sunny zest of oranges with the comforting texture of a soft loaf cake.

Orange Loaf
- 4 jumbo eggs
- 200g (1 cup) Sugar
- 250ml (1 cup) Oil
- 2-3 oranges with rind
- 250g (2 cups) self-raising flour
- 7.5ml (1 1/2 tsp) baking powder
𝗚𝗹𝗮𝗰𝗲 𝗶𝗰𝗶𝗻𝗴:
- 250ml (1 cup) icing sugar and
- 30ml (2 Tbsp) orange juice
𝗢𝗽𝘁𝗶𝗼𝗻𝗮𝗹
- Add a few drops of yellow food coloring
Instructions
- Whisk together eggs and sugar.
- Add oil and mix.
- Add juice (1 cup) of oranges (and grated rind-optional).
- Lastly, add sifted self-raising flour and baking powder, and mix.
- Pour mixture into greased ring tin and bake at 180°C/350°F for 30–35 minutes.
- For the cocktail bread (mini bread tins), bake for approximately 20 minutes, but you can gauge and remove it when nicely browned.
- Glaze icing: mix sifted icing sugar with orange juice.
- Once the cake is cooled, decorate with glaze icing and grated orange rind.
