Cook up some love with this easy Oven-Baked Greek Chicken recipe with Herb Butter flavors.

Oven-Baked Chicken
- 2-4 Chicken pieces
- 2 onions sliced
- 2 medium lemons, zested and juiced
- 1 tsp. Minced garlic
- 1 tsp. Dried oregano
- 4 tbsp. Olive oil
- Cayenne pepper to taste (1/4-1/2 tsp.)
- 2 Sprigs of fresh Rosemary, extra to serve
- 3 Sprigs of fresh Oregano
- Salt and black pepper to season
- 2-4 medium potatoes peeled and quartered.
Herb & Garlic Butter
- 7 tbsp unsalted butter, softened
- 4 garlic cloves, minced
- 2 tsp. Fresh rosemary leaves, finely chopped
- 2 tsp. Thyme leaves, finely chopped
- 1 tsp. Oregano
- 3/4 tsp. Kosher salt
- 1/4 tsp. Black pepper
Instructions
- Mix the Herb & Garlic Butter until smooth.
- Loosen the chicken skin from the flesh on the thigh and most of the leg spread 80% of the butter under the skin, (really get in there) then spread the remainder on top of the skin.
- Sprinkle some fresh herbs and paprika (for color) on top.
- Set aside for an hour or so.
- Line a large baking dish with foil.
- Add onion, oregano sprigs, and Rosemary sprigs, spreading evenly
- Place chicken on top of the onions.
- In a small bowl, add olive oil, lemon juice, garlic, dried oregano, lemon zest, and a teaspoon each of salt and cracked black pepper.
- Mix thoroughly and pour evenly over the chicken.
- Add potatoes to the dish and give a light spray with oil.
- Place in a preheated oven at 180C/350F and bake for 1 hr and 15 minutes.
- Turning potatoes once.
- Garnish with fresh Rosemary and lemon slices to serve.
- Serve with vegetables of your choice.
