Oven-Baked Greek Chicken with Herb Butter

Description

Cook up some love with this easy Oven-Baked Greek Chicken recipe with Herb Butter flavors.


Ingredients

Oven-Baked Chicken

  • 2-4 Chicken pieces
  • 2 onions sliced
  • 2 medium lemons, zested and juiced
  • 1 tsp. Minced garlic
  • 1 tsp. Dried oregano
  • 4 tbsp. Olive oil
  • Cayenne pepper to taste (1/4-1/2 tsp.)
  • 2 Sprigs of fresh Rosemary, extra to serve
  • 3 Sprigs of fresh Oregano
  • Salt and black pepper to season
  • 2-4 medium potatoes peeled and quartered.

 

Herb & Garlic Butter

  • 7 tbsp unsalted butter, softened
  • 4 garlic cloves, minced
  • 2 tsp. Fresh rosemary leaves, finely chopped
  • 2 tsp. Thyme leaves, finely chopped
  • 1 tsp. Oregano
  • 3/4 tsp. Kosher salt
  • 1/4 tsp. Black pepper

Instructions

  1. Mix the Herb & Garlic Butter until smooth.
  2. Loosen the chicken skin from the flesh on the thigh and most of the leg spread 80% of the butter under the skin, (really get in there) then spread the remainder on top of the skin.
  3. Sprinkle some fresh herbs and paprika (for color) on top.
  4. Set aside for an hour or so.
  5. Line a large baking dish with foil.
  6. Add onion, oregano sprigs, and Rosemary sprigs, spreading evenly
  7. Place chicken on top of the onions.
  8. In a small bowl, add olive oil, lemon juice, garlic, dried oregano, lemon zest, and a teaspoon each of salt and cracked black pepper.
  9. Mix thoroughly and pour evenly over the chicken.
  10. Add potatoes to the dish and give a light spray with oil.
  11. Place in a preheated oven at 180C/350F and bake for 1 hr and 15 minutes.
  12. Turning potatoes once.
  13. Garnish with fresh Rosemary and lemon slices to serve.
  14. Serve with vegetables of your choice.
