Description
Pecan pie is a pie of pecan nuts mixed with a filling of eggs, butter, and sugar. Variations may include white or brown sugar, cane syrup, sugar syrup, molasses, maple syrup, or honey or as in this case Golden Syrup.

Short Crust Pastry for Base
- 2 cups Flour
- 125g Cold Butter
- 125ml Iced Water
- 1 Teaspoon Lemon Juice
- 1/2 Teaspoon Salt
Pecan Nut Mixture
- 125g Pecan Nuts
- 60g butter
- 150g Brown Sugar
- 2 Large beaten eggs
- 100ml Golden syrup
- 1 teaspoon vanilla essence
Instructions
Pastry:
- Sift Flour and salt.
Cut butter into small cubes and rub into flour till it resembles breadcrumbs. - Mix water & lemon juice into the flour mix to make a stiff dough and knead it well.
- Cling it and refrigerate for 1 hour.
- After an hour roll out dough on a floured surface to about 3mm in thickness then roll out onto a greased 23cm to 25cm pie dish and blind bake.
Blind bake:
- Poke the base with a fork, place a sheet of greaseproof paper over the pastry, and sprinkle dried beans over it. Bake for 10 minutes.
- Remove beans and paper.
- Arrange pecan nuts on the pastry.
Mixture:
- Lightly beat the melted butter, sugar, and eggs together.
- Add Golden syrup & vanilla while beating till foamy.
- Pour egg mixture over nuts.
- Bake in a preheated oven at 180°C / 350F for 40 to 45 minutes.
- Leave to cool before removing from the pan.
