For the pork chops:
- 6 Pork chops
- A drizzle of olive oil
- Salt and pepper, to taste

For the maple glaze:
- 1/4 cup maple syrup
- 4 Tbsp balsamic vinegar (about 50 ml)
- 2 Tbsp beef broth (25 ml)
- 1 tsp dried mustard powder
- 1 heaping tsp crushed garlic (fresh or store-bought)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Pinch of salt and freshly ground pepper

Instructions
- In a small bowl, whisk together all the glaze ingredients.
- Pour the mixture into a pan and bring it to a gentle boil.
- Stir constantly for at least 3 minutes until it slightly thickens. Set aside.
- Heat a drizzle of olive oil in a skillet over medium-high heat.
- While it warms up, season the pork chops with salt and pepper.
- Once the pan is hot enough to sizzle on contact, add the chops and sear them until they’re golden and halfway cooked.
- Pour the prepared glaze over the chops and cover the pan with a lid.
- Let them cook through, basting occasionally with the thickening sauce.
- The glaze will start to caramelize, coating the meat in a glossy, sticky layer of flavor.
- Flip the chops and spoon more sauce over them.
- Continue cooking until they’re fully done and the glaze is beautifully caramelized.
- Plate the chops and drizzle every last bit of that incredibly awesome sauce over the top. Scrape the pan for any extra caramelized bits; they’re the best.
