- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 cup semisweet chocolate chips
- 4 cups crushed Potato Chips (Lay's work like a charm, but any chips will do)
Instructions
- Heat your oven to 350°F (180°C).
- Line a couple of baking sheets with parchment paper, unless you love to scrub the pans after baking.
- In a stand mixer, cream the butter, granulated sugar, and brown sugar until it’s fluffy, around 3 to 5 minutes.
- Add the vanilla and eggs, then mix until nicely combined.
- Toss in the flour, baking soda, and salt.
- Mix it on low speed until it looks like cookie dough.
- Stir in the chocolate chips and half of the crushed Potato Chips.
- Roll the dough into 2-inch balls and coat them in the remaining crushed chips until they’re completely covered.
- Space the dough balls about 2 inches apart on your baking sheets.
- Bake for 12 to 15 minutes, or until the edges are golden brown.
- Let the cookies chill on the baking sheet for about 5 minutes, then transfer them to a wire rack so they can cool completely.
- If you cannot resist, sneak one while it’s warm. No judgment.
