Description
Quick and easy, Bacon, Potato, and Onion side dish for any meal. Wonderful, delicious, and great-tasting Cheesy Potato dish, with sliced spring onions.
Ingredients

- 4 medium potatoes
- 1/2 large onion
- 2-3 slices bacon
- 3 spring onions
- 1/2 packet on mushroom soup
- ±300 ml milk
- A big hand full of grated sharp cheddar cheese
Instructions
- Scrub and wash the potatoes.
- Slice them in ½ to ¾ cm thick slices (leave the skin on).
- Slice the onion in rings of about ½cm thick.
- Slice the bacon length-wise in half and cut into small pieces.
- Clean and cut up the spring onion into small pieces, inclusive of the leaves.
- Mix the mushroom soup with the milk and set aside.
- Pack a layer of onion slices on the bottom of the baking dish.
- Then add the potato slices and top with more onion.
- Sprinkle with spring onion and bacon pieces.
- Bake in a pre-heated oven at 180-200C / 350-400F for approximately 20 minutes or until the potato is soft.
- Add the grated cheese and bake until the top is nice and brown.
- Serve immediately.
