Easy Potato, Onion and Bacon Bake

Description

Quick and easy, Bacon, Potato, and Onion side dish for any meal. Wonderful, delicious, and great-tasting Cheesy Potato dish, with sliced spring onions.


Ingredients

Scale
  • 4 medium potatoes
  • 1/2 large onion
  • 2-3 slices bacon
  • 3 spring onions
  • 1/2 packet on mushroom soup
  • ±300 ml milk
  • A big hand full of grated sharp cheddar cheese

Instructions

  1. Scrub and wash the potatoes.
  2. Slice them in ½ to ¾ cm thick slices (leave the skin on).
  3. Slice the onion in rings of about ½cm thick.
  4. Slice the bacon length-wise in half and cut into small pieces.
  5. Clean and cut up the spring onion into small pieces, inclusive of the leaves.
  6. Mix the mushroom soup with the milk and set aside.
  7. Pack a layer of onion slices on the bottom of the baking dish.
  8. Then add the potato slices and top with more onion.
  9. Sprinkle with spring onion and bacon pieces.
  10. Bake in a pre-heated oven at 180-200C / 350-400F for approximately 20 minutes or until the potato is soft.
  11. Add the grated cheese and bake until the top is nice and brown.
  12. Serve immediately.
