Description
Bake up some joy in just minutes with soft, spiced rock buns that feel like a warm hug in every bite.

- 250 g / 2 cups + 1tbsp plain flour
- 10 ml / 2 tsp baking powder
- A dash of salt
- 100 g / 1 stick of butter
- 75 g / 1/4 cup + 2 tbsp of sugar
- 2.5 ml / 1/2 tsp of mixed spice or cinnamon (optional)
- 150 g / 1 cup of sultanas and raisins or mixed peel
- 50 ml / 1/4 cup of buttermilk (or milk with a splash of ± 5 ml of vinegar)
- 1 large egg

Instructions
- I prefer to weigh out my ingredients, as it’s more accurate, but that’s my personal preference. Feel free to use the other measurements if you wish.
- Preheat your oven to 200°C (395°F) and line a baking tray with parchment paper.
- Sift the flour into a large bowl, then rub in the butter with your fingertips until it looks like breadcrumbs.
- Stir in the sugar, salt, baking powder, cinnamon, and fruit. Mixed peel is another option that I love. Unfortunately, I did not have any today, but I will add some next time.
- Make a well in the center of the mixture and set it aside for now.
- In a separate bowl, beat the buttermilk (milk and vinegar) and egg together, then pour this into the flour mixture.
- Mix with a spoon, and then continue to use your fingers to bring it all together until there are no dry bits left.
- The dough will be soft and a little sticky, so don’t worry if it feels wet.
- Spoon 9 lumps of dough onto a parchment-lined baking tray, making sure they’re rough and uneven, like little rocks!
- Sprinkle a bit extra sugar over the tops of each one.
- Bake for around 15 minutes or until they are golden brown and firm to the touch.
- Enjoy your delicious rock buns!
