Quick and Easy Cinnamon-Spiced Rock Buns

Description

Bake up some joy in just minutes with soft, spiced rock buns that feel like a warm hug in every bite.


Ingredients

Units Scale
  • 250 g / 2 cups + 1tbsp plain flour
  • 10 ml / 2 tsp baking powder
  • A dash of salt
  • 100 g / 1 stick of butter
  • 75 g / 1/4 cup + 2 tbsp of sugar
  • 2.5 ml / 1/2 tsp of mixed spice or cinnamon (optional)
  • 150 g / 1 cup of sultanas and raisins or mixed peel
  • 50 ml / 1/4 cup of buttermilk (or milk with a splash of ± 5 ml of vinegar)
  • 1 large egg


Instructions

  1. I prefer to weigh out my ingredients, as it’s more accurate, but that’s my personal preference.  Feel free to use the other measurements if you wish.
  2. Preheat your oven to 200°C (395°F) and line a baking tray with parchment paper.
  3. Sift the flour into a large bowl, then rub in the butter with your fingertips until it looks like breadcrumbs.
  4. Stir in the sugar, salt, baking powder, cinnamon, and fruit. Mixed peel is another option that I love. Unfortunately, I did not have any today, but I will add some next time.
  5. Make a well in the center of the mixture and set it aside for now.
  6. In a separate bowl, beat the buttermilk (milk and vinegar) and egg together, then pour this into the flour mixture.
  7. Mix with a spoon, and then continue to use your fingers to bring it all together until there are no dry bits left.
  8. The dough will be soft and a little sticky, so don’t worry if it feels wet.
  9. Spoon 9 lumps of dough onto a parchment-lined baking tray, making sure they’re rough and uneven, like little rocks!
  10. Sprinkle a bit extra sugar over the tops of each one.
  11. Bake for around 15 minutes or until they are golden brown and firm to the touch.
  12. Enjoy your delicious rock buns!
