- 250g butter
- 2 cups sugar
- 2 tsp vanilla essence
- 6 large eggs
- 2 tbsp baking powder
- 3 cups flour
- 1 1/2 cup milk
Instructions
- Cream butter and sugar in a large mixing bowl, and add vanilla essence.
- Add eggs one at a time and combine
- Sift baking powder and flour in, mix it through, and alternate it with the milk
- The batter will be thick
- Scoop it into paper cups in a cupcake tray with an ice cream scoop to make sure all cupcakes even
- Make sure you use good quality paper cups so they don’t peel away after baking – I used Wilton cups
- Sprinkle top with chopped pecans
- Bake at 180C/350F for 15 minutes, or until done and a tester comes out clean.
- Use the middle of the oven
- Decorate as desired
