Description

Amarula Malva Pudding is a sweet South African favorite, soaked in rich cream sauce.


Ingredients

Pudding

  • 1 large egg
  • 250 ml berry sugar (regular sugar works too)
  • 1 tbsp smooth apricot jam
  • 2 tbsp salted butter, softened (not margarine)
  • 250 ml flour
  • 1 tsp baking soda
  • Pinch of salt
  • 250 ml milk (any kind - richer milk = richer pudding)
  • 1 tsp white vinegar

Amarula Sauce

  • 125 ml butter, melted
  • 237 ml cream
  • 125 ml sugar
  • 80 ml Amarula

Custard


Instructions

  1. Beat the egg and sugar until light and creamy.
  2. Add the jam and butter, and beat again.
  3. Stir in flour, soda, and salt.
  4. Slowly mix in the milk. Add vinegar last and stir until smooth.
  5. Pour into a buttered dish, cover with foil, and bake at 350°F (175°C) for 40–45 minutes until golden.
  6. In a saucepan, melt butter with cream and sugar. Stir gently until the sugar dissolves.
  7. Let it bubble for a minute, then remove from the heat and stir in Amarula.
  8. Pour the hot sauce over the hot pudding straight from the oven.
  9. Pop it back in the oven (turned off) for 5 minutes so it soaks up properly.
  10. Mix custard powder, sugar, and milk in a heatproof bowl.
  11. Microwave 5–8 minutes, stirring a few times until thick.
  12. Add vanilla and cook another minute.
  13. Spoon warm pudding into bowls, top with custard, and enjoy every gooey bite.
