Description

Make Fluffy Arabic Dough Rolls at home with simple ingredients. These soft rolls are perfect for any meal and bring bakery flavors to your kitchen.


Ingredients

  • 2 cups warm water
  • 4 tbsp sugar (or 2 tbsp if you prefer less sweetness)
  • 2 tbsp instant yeast
  • 2 cups cake flour
  • 1/2 tsp salt
  • 2 tbsp milk powder (like Klim or any other)
  • 1/2 cup oil
  • 3 cups all-purpose flour
  • 1 tsp baking powder (optional)
  • 1 egg, beaten (for egg wash, optional)
  • Sesame seeds (optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a baking tray, then dust it lightly with cornflour.
  2. In a large bowl, mix 2 cups of warm water, 4 tbsp sugar, 2 tbsp instant yeast, 2 cups cake flour, 1/2 tsp salt, and 2 tbsp milk powder.
  3. Set aside for 10–15 minutes until frothy and bubbly.
  4. Add 1/2 cup oil, 3 cups all-purpose flour, and 1 tsp baking powder (optional). Mix well.
  5. Knead the dough with a stand mixer using the dough hook for 7 minutes, or knead by hand until it’s elastic and smooth. A slightly sticky texture is okay.
  6. Transfer the dough into an oiled bowl, cover with cling wrap, and let it rise for 30 minutes until doubled in size.
  7. Punch down the dough and divide it into 12 equal portions. Shape into rolls.
  8. Optional: Brush rolls with a beaten egg for a golden finish and sprinkle sesame seeds on top. For plain rolls, just dust lightly with flour.
  9. Let the rolls rise again on the counter for about 20 minutes until puffed up.
  10. Bake at 180°C (350°F) for 15–18 minutes, until golden brown.
  11. Remove from oven and cool slightly before enjoying.
  12. Perfect for sandwiches, with dips, or as pizza/naan base.
