Scale
- 2 cups warm water
- 4 tbsp sugar (or 2 tbsp if you prefer less sweetness)
- 2 tbsp instant yeast
- 2 cups cake flour
- 1/2 tsp salt
- 2 tbsp milk powder (like Klim or any other)
- 1/2 cup oil
- 3 cups all-purpose flour
- 1 tsp baking powder (optional)
- 1 egg, beaten (for egg wash, optional)
- Sesame seeds (optional)
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking tray, then dust it lightly with cornflour.
- In a large bowl, mix 2 cups of warm water, 4 tbsp sugar, 2 tbsp instant yeast, 2 cups cake flour, 1/2 tsp salt, and 2 tbsp milk powder.
- Set aside for 10–15 minutes until frothy and bubbly.
- Add 1/2 cup oil, 3 cups all-purpose flour, and 1 tsp baking powder (optional). Mix well.
- Knead the dough with a stand mixer using the dough hook for 7 minutes, or knead by hand until it’s elastic and smooth. A slightly sticky texture is okay.
- Transfer the dough into an oiled bowl, cover with cling wrap, and let it rise for 30 minutes until doubled in size.
- Punch down the dough and divide it into 12 equal portions. Shape into rolls.
- Optional: Brush rolls with a beaten egg for a golden finish and sprinkle sesame seeds on top. For plain rolls, just dust lightly with flour.
- Let the rolls rise again on the counter for about 20 minutes until puffed up.
- Bake at 180°C (350°F) for 15–18 minutes, until golden brown.
- Remove from oven and cool slightly before enjoying.
- Perfect for sandwiches, with dips, or as pizza/naan base.
