- 2 ripe avocados (not too soft), halved and pitted, skins left on
- 1/4 to 1/3 cup shredded extra-sharp cheddar cheese
- 1 tablespoon mayo
- 1 tablespoon grated Parmesan
- About 120g cooked shrimp
- A pinch of cayenne, paprika, or any spice you like
Instructions
- Set your oven to Broil.
- Place the avocado halves, cut-side up in a baking dish.
- In a small bowl, mix the shrimp, cheddar, mayo, and Parmesan until well blended.
- Spoon the cheesy shrimp mix into the avocado halves.
- Sprinkle with a bit of spice for extra flavor.
- Broil about 3β4 inches from the heat until the cheese bubbles and turns golden, around 3 to 5 minutes.
