Ingredients

  • 2 ripe avocados (not too soft), halved and pitted, skins left on
  • 1/4 to 1/3 cup shredded extra-sharp cheddar cheese
  • 1 tablespoon mayo
  • 1 tablespoon grated Parmesan
  • About 120g cooked shrimp
  • A pinch of cayenne, paprika, or any spice you like

Instructions

  1. Set your oven to Broil.
  2. Place the avocado halves, cut-side up in a baking dish.
  3. In a small bowl, mix the shrimp, cheddar, mayo, and Parmesan until well blended.
  4. Spoon the cheesy shrimp mix into the avocado halves.
  5. Sprinkle with a bit of spice for extra flavor.
  6. Broil about 3–4 inches from the heat until the cheese bubbles and turns golden, around 3 to 5 minutes.
  7. Serve hot and munch away! Creamy, cheesy, spicy, and full of flavor, this one’s hard to resist.
