Ingredients

  • 1 (10 oz) pack frozen spinach, thawed
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 cup milk (non-fat works fine)
  • 2 eggs
  • 1/2 cup finely chopped onion
  • 3 cups shredded sharp cheddar cheese, divided (see tip below)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Squeeze out as much water as you can from the thawed spinach.
  3. The easiest way? Wrap it in a clean kitchen towel and wring it out like a sponge. You’ll be amazed how much water comes out.
  4. Fluff up the spinach with a fork or your fingers so it’s not clumpy.
  5. In a big bowl, mix the flour, baking soda, salt, milk, and eggs with a fork until smooth.
  6. Stir in the onion, 2 cups of the cheese, and the spinach.
  7. Pour into a greased 12×8-inch baking dish (or two 9×5 loaf pans if you want to freeze one for later).
  8. Sprinkle the last cup of cheese on top.
  9. Bake for 30–35 minutes, until it’s golden on top and firm in the center.
    Want it extra golden? Move it to the top rack for the last couple of minutes—but keep an eye on it.
  10. Tip:
  11. You can use less cheese if you want it lighter; try using 2 cups total instead of 3. It’ll still taste great.
  12. These spinach squares are warm, cheesy, and full of flavor. Whether you’re feeding a crowd or stocking the freezer, this one’s a keeper.
