- 1 cup vegetable broth
- 3/4 cup extra-virgin olive oil
- 3/4 cup balsamic vinegar
- 6 tablespoons honey
- 3 teaspoons Dijon mustard
- 3 teaspoons mayonnaise (or 1 teaspoon butter, optional, for texture)
- 3 teaspoons lemon juice
- Kosher salt and freshly ground black pepper
Instructions
- Add broth, olive oil, balsamic vinegar, honey, Dijon mustard, mayonnaise or butter, lemon juice, and seasonings to a saucepan.
- Cook on low heat, stirring occasionally, until the liquid reduces by half and thickens, about 25–35 minutes depending on your stove.
- Remove from the heat and let it cool slightly.
- Drizzle over roasted vegetables like carrots, Brussels sprouts, or broccoli, or use as a dipping sauce.
- Storage Tip: Keep in an airtight jar in the fridge for up to 1 week. Reheat gently before serving.
