Description
Most banana breads are soft. This one bites back, in the best way. One bite and you’ll want to hide the loaf.

- 3 ripe bananas
- 1 tsp baking soda
- 1/4 cup margarine
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups self-raising flour
- A pinch of salt
- 1/4 to 1/2 cup slivered almonds
Instructions
- Preheat your oven to 325°F/165°C.
- Grease a loaf pan well; nonstick spray or butter works.
- If your bananas aren’t super ripe, microwave them for 30–40 seconds to soften.
- Mash the bananas in a small bowl.
- Stir in the baking soda and let it sit.
- In a large bowl, beat together the margarine, sugar, egg, and vanilla until smooth.
- Mix in the mashed bananas.
- Add the flour and salt.
- Stir until combined, PLEASE don’t overmix.
- Pour the batter into your greased pan.
- Sprinkle slivered almonds on top.
- Bake for about 50 minutes.
- Start checking around the 45-minute mark.
- If a toothpick in the center comes out clean, it’s ready.
