Description

Most banana breads are soft. This one bites back, in the best way. One bite and you’ll want to hide the loaf.

Instructions

  1. Preheat your oven to 325°F/165°C.
  2. Grease a loaf pan well; nonstick spray or butter works.
  3. If your bananas aren’t super ripe, microwave them for 30–40 seconds to soften.
  4. Mash the bananas in a small bowl.
  5. Stir in the baking soda and let it sit.
  6. In a large bowl, beat together the margarine, sugar, egg, and vanilla until smooth.
  7. Mix in the mashed bananas.
  8. Add the flour and salt.
  9. Stir until combined, PLEASE don’t overmix.
  10. Pour the batter into your greased pan.
  11. Sprinkle slivered almonds on top.
  12. Bake for about 50 minutes.
  13. Start checking around the 45-minute mark.
  14. If a toothpick in the center comes out clean, it’s ready.

This banana bread is soft, sweet, and has the perfect crunch from the almonds. Great for breakfast, snacking, or a cozy treat with coffee. Give it a try, you won’t regret it.
