Description

Banana Muffins with chia that freeze perfectly. Keep a stash ready for busy mornings.

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, whisk flour, chia seeds, baking powder, baking soda, salt, sugar, and cinnamon.
  4. In another bowl, mash bananas.
  5. Stir in applesauce, egg, and vanilla.
  6. Add wet ingredients to dry, mixing gently until just combined. Don’t overmix.
  7. Divide batter into 10–12 muffin cups.
  8. Bake 18–22 minutes (depending on your oven) until a toothpick comes out clean.
  9. Cool slightly before serving.

Storage: Keep in an airtight container for 3 days or freeze up to 2 months.
