Banana Chia Seed Muffins with such healthy little Chia seeds for breakfast.
What happens when you add chia seeds to muffins?
Combining chia seeds with water and letting the mixture sit creates a gummy-like mixture that can be used as a binder instead of eggs. This can be used for recipes such as cookies, waffles, bread, cakes, muffins, and more.
Ingredients
1 cup whole-wheat flour
25ml chia seeds
15ml baking powder
2.5ml baking soda
1.25ml tsp salt
1 cup mashed banana (about 2 bananas)
¼ cup unsweetened applesauce
1 egg
5ml vanilla
¼ cup demerara brown sugar
1 tsp cinnamon
Method
Preheat your oven to 350 degrees F.
In a large mixing bowl, add in the dry ingredients (flour, baking powder, baking soda, salt, sugar and cinnamon, and chia seeds)
Mash the bananas, then mix together all the wet ingredients (banana, applesauce, egg, vanilla)
Mix the dry and wet until combined, and place in your muffin tins lined with cupcake liners.
Bake for 14 minutes or until cooked through.
