1 cup whole-wheat flour
25ml chia seeds
15ml baking powder
2.5ml baking soda
1.25ml tsp salt
1 cup mashed banana (about 2 bananas)
¼ cup unsweetened applesauce
¼ cup demerara brown sugar
1 tsp cinnamon
Preheat your oven to 350 degrees F.
In a large mixing bowl, add in the dry ingredients (flour, baking powder, baking soda, salt, sugar and cinnamon and chia seeds)
Mash the bananas, then mix together all the wet ingredients (banana, applesauce, egg, vanilla)
Mix the dry and wet until combined, and place in your muffin tins lined with cupcake liners.
Bake for 14 minutes or until cooked through.
