Eclairs
- 1 cup water
- 125 g butter OR Stork Bake
- 1 cup cake flour
- 1 tablespoon castor sugar
- 3 X large eggs
- A drop of vanilla essence.
Royal icing:
- 1 egg white
- 1 cup icing sugar
- 1/2 tsp water
- A drop or two yellow liquid food coloring
Filling
- 250 ml whipped cream
Instructions
Eclairs
- Allow water, butter & vanilla essence to boil in a saucepan.
- Remove from heat, add the cake flour and castor sugar, and mix well.
- Carry on mixing over very low heat until the paste forms a ball and the sides of the saucepan are clean.
- Place the ball in a mixing bowl and allow it to cool.
- Once cool beat in the eggs one at a time, blending well after each addition.
- Pipe or spoon the mixture onto a greased baking tray and bake in a preheated Thermofan oven at 200°C/ 392°F for 15 minutes.
- Lower oven temp to 180°C/356°F and bake further 13 min OR until golden brown.
- I used a big star nozzle and pipe in a banana curve.
- Serve with whipped cream and with royal icing as topping.
Royal icing
- Whip the egg white till its stiff peak.
- Fold in the sieved icing sugar.
- Add water and a little yellow liquid coloring.
- Mix well and pipe straight over eclairs.
