Orange Chicken
- 4–6 Boneless & Skinless Chicken Thighs
- 1/3 cup Flour
- 1/3 cup Cornflour (Corn starch, maize starch, or cornflour is the starch derived from corn grain)
- 3 Eggs (beaten)
- Oil for frying
- Salt to taste
Orange Sauce
- 1 cup Orange Juice
- 1/2 cup Sugar/ Honey
- 2 Tbsp. Vinegar
- 2 Tbsp. Soy Sauce
- 1 Tbsp. Ground Ginger & Garlic
- 1 tsp. Red Chili Flakes
- 2 Tbsp. Cornflour & Water
- 1 Orange – zest
- Chopped Spring Onion (garnish)
Egg Fried Rice
- 2 cups Rice (cooked & cooled)
- 1 Onion (chopped)
- 1/3 cup Peppers (chopped)
- 3 Eggs (beaten)
- 2 Tbsp. Soy Sauce
- 2 Tbsp. Sesame Oil
- Chopped Spring Onion (garnish)
Chicken Egg Noodles
- 1 Package Egg Noodles (boiled)
- Chicken Fillets (cut into strips)
- Your Choice of Stir Fry Veg
- 2–3 Tbsp. Sesame Oil
- 3/4 Tbsp. Soy Sauce
- 3 Cloves Garlic (grated)
- 1 Knob Ginger (grated)
- Sesame Seeds (garnish)
Instructions
Orange Chicken
- Cut the chicken into bite-sized pieces.
- Mix the dry ingredients together.
- Dip the chicken pieces in the egg then coat well in the flour mixture.
- Fry in batches until golden brown and crispy in a non-stick pan.
- Drain and set aside.
Orange Sauce
- Add orange juice, sugar, vinegar, soy sauce, ginger, garlic, and chili flakes to a saucepan and heat for about 5 minutes.
- Whisk the cornflour into enough water to form a smooth slurry.
- Add to the orange sauce and whisk.
- Cook until the sauce begins to thicken.
- Once thick, remove from heat and add in the zest.
- Pour the sauce over the chicken pieces and toss well to ensure an even coating.
- Garnish with spring onion and enjoy!!
Egg Fried Rice
- Heat oil and sauté the peppers and onion.
- Add in the eggs and mix to scramble just until set, then add in the rice and stir to break up any lumps.
- Pour in the soy sauce and toss well.
- Remove from heat & garnish
