Description

Biscuit Caramel Squares: the no-bake treat made from cookie crumbs and pure magic
Turn leftover biscuits into something incredible with this easy fridge-set dessert. All you need is caramel condensed milk, crushed cookies, and a few minutes. Try it once and you’ll be hooked.


Ingredients

Melt together:

Then add:

  • 2 packets crushed biscuits (**see note below)
  • 1 1/2 cups cake fruit mix (dried fruit blend)

Optional:

  • Pine nuts for topping (or any kind of nuts you like)

To Make Icing Sugar (if you don’t have any):

Blend sugar and cornstarch in a blender for about 1 minute until it turns into a fine powder.

Biscuit Note:

You can use any cookies you’ve got on hand! One batch used:

  • 1 pack of Tennis biscuits
  • 1/4 pack sugar-free shortbread
  • About 10 macadamia + milk chocolate cookies

The mix of cookie types adds great texture and flavor.

Extra Tip:

For a firmer square, stir 4 heaped teaspoons of Cornflour (mixed with water into a paste) into the caramel mix before microwaving. Heat for about 5 minutes until it thickens. The thicker the caramel mix, the better it sets.


Instructions

  1. Toss the margarine, caramel condensed milk, icing sugar, and salt into a big microwave-safe bowl.
  2. Microwave for 1–2 minutes. Take it out and whisk until smooth with no lumps.
  3. Stir in the crushed biscuits and dried fruit. Use a sturdy spoon or spatula and mix well so everything is coated.
  4. Spoon the mixture into a greased flat pan and press it down firmly.
  5. Sprinkle over pine nuts if you want.
  6. Chill in the fridge until set (overnight is best).
  7. Cut into bite-sized squares and keep them in an airtight container in the fridge. They’ll soften if left out too long.
