A creamy, fruity, and nourishing make-ahead breakfast packed with cherries, coconut, and chia.

- 2 cups steel-cut oats
- 200 g frozen black cherries (or any berries of your choice)
- 3 cups almond milk (or milk of your choice)
- 1/4 cup shredded unsweetened coconut
- 2 heaping tsp ground chia seed
- 1 heaping tsp flaxseed
- 1 heaping tsp whole psyllium husk (optional)
- 1/4-1/2 cup maple syrup (to taste)
- 1 tsp vanilla extract
Instructions
- Blend the frozen cherries with 1½ cups almond milk until smooth.
- Add a little extra milk if needed to get a soft purée.
- In a large bowl, combine oats, coconut, chia, flaxseed, psyllium husk, maple syrup, vanilla, remaining milk, and the cherry purée. Stir well.
- Adjust the liquid if you like, but it’s best to wait until morning to check the consistency.
- Cover and refrigerate overnight.
- Serve chilled the next morning.
- Add a splash of milk if needed before serving
