Description

A creamy, fruity, and nourishing make-ahead breakfast packed with cherries, coconut, and chia.


Ingredients

  • 2 cups steel-cut oats
  • 200 g frozen black cherries (or any berries of your choice)
  • 3 cups almond milk (or milk of your choice)
  • 1/4 cup shredded unsweetened coconut
  • 2 heaping tsp ground chia seed
  • 1 heaping tsp flaxseed
  • 1 heaping tsp whole psyllium husk (optional)
  • 1/4-1/2 cup maple syrup (to taste)
  • 1 tsp vanilla extract

Instructions

  1. Blend the frozen cherries with 1½ cups almond milk until smooth.
  2. Add a little extra milk if needed to get a soft purée.
  3. In a large bowl, combine oats, coconut, chia, flaxseed, psyllium husk, maple syrup, vanilla, remaining milk, and the cherry purée. Stir well.
  4. Adjust the liquid if you like, but it’s best to wait until morning to check the consistency.
  5. Cover and refrigerate overnight.
  6. Serve chilled the next morning.
  7. Add a splash of milk if needed before serving
