Description

Need a veggie dish that doesn’t taste like one? Bok Choy with Bacon and Onion brings smoky, savory, and just a little tangy, all in under 10 minutes. Would you eat it as a side or the main event?


Ingredients

Scale
  • 1/2 pack of bacon, chopped (trim off most of the fat)
  • 1/2 onion, sliced into long strips
  • 8 baby bok choy, ends trimmed and rinsed well
  • 1 tbsp apple cider vinegar

Instructions

  1. Cook the bacon and onions together in a pan on low heat.
  2. Let them soften, but don’t let them get too brown.
  3. Add the bok choy right on top; it should still be a little wet from washing. That moisture helps it steam.
  4. Cover the pan and let everything cook for about 5 minutes.
  5. Give it a good toss, splash in the vinegar, and cook for another 3 minutes with the lid back on.

That’s it. Simple, savory, and seriously good. Give it a go, you’ll want seconds
