- 1/2 pack of bacon, chopped (trim off most of the fat)
- 1/2 onion, sliced into long strips
- 8 baby bok choy, ends trimmed and rinsed well
- 1 tbsp apple cider vinegar
Instructions
- Cook the bacon and onions together in a pan on low heat.
- Let them soften, but don’t let them get too brown.
- Add the bok choy right on top; it should still be a little wet from washing. That moisture helps it steam.
- Cover the pan and let everything cook for about 5 minutes.
- Give it a good toss, splash in the vinegar, and cook for another 3 minutes with the lid back on.
