Craving a veggie dish that doesn’t feel like a chore? Try Bok Choy with Mushrooms
Ingredients

- 1 medium onion
- 1 can of sliced mushrooms
- 6 to 8 baby Bok Choy
- Basil
- Thyme
- Rosemary
- Parsley
- Salt
- Freshly ground black pepper
- Virgin olive oil
Instructions
- Slice the onion into thick pieces, then cut them into quarters.
- Heat a splash of olive oil in a big pan.
- Add the onions and canned mushrooms.
- Cook until they’re just how you like them, soft or slightly golden.
- Wash the Bok Choy, pull the leaves apart, and chop into bite-sized pieces.
- Toss them into the pan.
- Season with basil, thyme, rosemary, parsley, and salt, however much you like.
- Let it all cook until the Bok Choy softens and wilts.
- Finish with some freshly ground black pepper, give it a quick stir, and serve it hot.
