Ingredients

Cake:

  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 cup whole-wheat flour
  • 1 cup white flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 cups grated carrots (about 3 big ones)
  • 1 1/4 cups grated apple (2 large apples, peeled)
  • 1 cup raisins
  • 1/2 cup chopped walnuts or pecans

Cream Cheese Topping:

  • 1/4 cup butter (softened)
  • 4 oz (125g) cream cheese
  • 1 cup icing sugar
  • 1/2 tsp vanilla extract

Instructions

Cake

  1. Preheat your oven to 350°F (180°C).
  2. In a big bowl, mix sugar, oil, and eggs until smooth.
  3. In another bowl, combine both flours, baking soda, salt, and cinnamon.
  4. Pour the wet mix into the dry and stir until just combined.
  5. Fold in the carrots, apples, raisins, and nuts.
  6. Pour into a greased or lined 9×13 pan.
  7. Bake for 35–40 minutes, or until a toothpick poked in the center comes out clean.
  8. Let it cool a little, if you have the willpower to wait! 

Cream Cheese:

  1. Mix the butter, cream cheese, icing sugar, and vanilla until it’s super smooth.
  2. Slather it over the cooled cake.
