Cake:
- 1 cup sugar
- 1 cup vegetable oil
- 4 eggs
- 1 cup whole-wheat flour
- 1 cup white flour
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups grated carrots (about 3 big ones)
- 1 1/4 cups grated apple (2 large apples, peeled)
- 1 cup raisins
- 1/2 cup chopped walnuts or pecans
Cream Cheese Topping:
- 1/4 cup butter (softened)
- 4 oz (125g) cream cheese
- 1 cup icing sugar
- 1/2 tsp vanilla extract
Instructions
Cake
- Preheat your oven to 350°F (180°C).
- In a big bowl, mix sugar, oil, and eggs until smooth.
- In another bowl, combine both flours, baking soda, salt, and cinnamon.
- Pour the wet mix into the dry and stir until just combined.
- Fold in the carrots, apples, raisins, and nuts.
- Pour into a greased or lined 9×13 pan.
- Bake for 35–40 minutes, or until a toothpick poked in the center comes out clean.
- Let it cool a little, if you have the willpower to wait!
Cream Cheese:
- Mix the butter, cream cheese, icing sugar, and vanilla until it’s super smooth.
- Slather it over the cooled cake.
