Description
Cheddar Cheese Puffs come together fast using simple pantry ingredients. They are a cozy homemade snack that everyone will love, especially with an optional jalapeño cottage cheese topping.

- 1 cup of cake flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cayenne pepper, optional but lovely
- 3/4 cup grated cheddar cheese, sharp works best
- 1 large egg, whisked
- 3/4 cup milk
- 1 tbsp butter, melted and slightly cooled
Optional Filling for Serving
- Smooth jalapeño cottage cheese
Instructions
- Heat your oven to 240°C. If you use a fan oven, lower it to 220°C.
- Grease a 12-cup patty tin well so nothing sticks.
- In a medium bowl, stir together 1 cup of cake flour, 4 tsp baking powder, 1½ tsp salt, and ¼ tsp cayenne pepper until evenly mixed.
- Add ¾ cup grated cheddar cheese and give it a quick stir so the cheese is coated in the flour. This helps stop sinking.
- In a jug, whisk together 1 egg, ¾ cup milk, and 1 Tbsp melted butter.
- Pour the wet mixture into the dry ingredients and gently stir just until combined. Don’t overmix.
- The batter should look thick and a bit lumpy.
- Spoon the batter evenly into the greased tins, filling each about ¾ full.
- Bake for 10 to 12 minutes, until puffed, golden, and set in the middle.
- Let them cool in the tin for a couple of minutes, then lift out and serve warm.
- Slice them open and add a spoonful of smooth jalapeño cottage cheese on top if you like a little heat.
