Description

These Cheese Puff Pies bake up golden with layers of buttery pastry and melty cheese inside. They’re simple, satisfying, and perfect for sharing.


Ingredients

  • 225 g plain flour (plus extra for rolling)
  • 1/2 tsp fine salt
  • 150 ml ice-cold water
  • 225 g cold unsalted butter, cut into cubes
  • 2 cups grated cheese (cheddar or your favorite meltable cheese)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, sift the flour and salt.
  2. Toss in the butter cubes and cut through with a pastry cutter or your fingertips until the mix looks rough and chunky (don’t overwork it, lumpy bits are fine).
  3. Drizzle in the cold water, a little at a time, and stir with a wooden spoon until the dough comes together.
  4. Don’t knead it smooth, it should be a little messy.
  5. Wrap in cling film and chill for 15 minutes.
  6. Dust your counter with flour.
  7. Roll the dough into a rectangle, then fold it into thirds like a letter.
  8. Turn, roll, and fold again 3–4 times to create layers.
  9. Chill another 10 minutes if it feels too soft.
  10. Roll out the dough to about 5 mm thick.
  11. Cut circles around 9 cm wide.
  12. Place a small spoonful of cheese (not too much, or it’ll leak out) in the center of each circle.
  13. Brush edges with egg wash, fold, and press to seal.
  14. Arrange on a lined baking sheet.
  15. Brush tops with egg wash and sprinkle with a pinch of salt.
  16. Bake at 180°C (350°F) for 20–30 minutes, until puffed and golden.
  17. Let cool slightly before serving, they’ll be hot inside!
