Scale
- 225 g plain flour (plus extra for rolling)
- 1/2 tsp fine salt
- 150 ml ice-cold water
- 225 g cold unsalted butter, cut into cubes
- 2 cups grated cheese (cheddar or your favorite meltable cheese)
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, sift the flour and salt.
- Toss in the butter cubes and cut through with a pastry cutter or your fingertips until the mix looks rough and chunky (don’t overwork it, lumpy bits are fine).
- Drizzle in the cold water, a little at a time, and stir with a wooden spoon until the dough comes together.
- Don’t knead it smooth, it should be a little messy.
- Wrap in cling film and chill for 15 minutes.
- Dust your counter with flour.
- Roll the dough into a rectangle, then fold it into thirds like a letter.
- Turn, roll, and fold again 3–4 times to create layers.
- Chill another 10 minutes if it feels too soft.
- Roll out the dough to about 5 mm thick.
- Cut circles around 9 cm wide.
- Place a small spoonful of cheese (not too much, or it’ll leak out) in the center of each circle.
- Brush edges with egg wash, fold, and press to seal.
- Arrange on a lined baking sheet.
- Brush tops with egg wash and sprinkle with a pinch of salt.
- Bake at 180°C (350°F) for 20–30 minutes, until puffed and golden.
- Let cool slightly before serving, they’ll be hot inside!
